    Amaranthus spp. is a genus of plants commonly known as amaranth. It is commonly cultivated for it's greens (leaves), or for the cereal-like grains (seeds) it produces that contain large amounts of beneficial nutrients. Considered weeds by some, amaranth has been a valuable food crop throughout history and is quickly regaining acceptance in our food system.
