    Harvest Young seeds and seedpods are sweet and can be eaten raw or cooked. Roasted seeds can be used as a coffee substitute*. Roasting at 300 degrees F for 3-4 hours is necessacery to destroy toxins in the seeds. Also eaten as a nut after roasting (see notes on toxicity).

    Notes Seeds contain hyrocyanic acid. It can be almost entirerly eliminated by heating for at least 180-200 min at 300 degrees F+. Like many plants, including many beans and quinoa, seeds contain saponins which can be harmful if consumed in large quantities, but are poorly absorbed by the human body. Boiling in water with several changes of water can help reduce saponin content. Saponins are highly toxic to some other animals, which is why many native tribes used them to kill fish.
